OK, so I’m trying to eat better yet again…
No, no, for reals! I mean it!
Yeah, I get it. I’ve tried and tried and tried some more over the years, but I had actually and seriously been doing SOOooo well before my back took a crap back in October, leaving me LITERALLY (and yes I used that word correctly) laying in the bed in the spare room for 3+ months straight in excruciating pain. I was even unable to do the stairs without help on most days and I had to be pushed around in wheelchairs to doctors appointments. I wouldn’t wish back pain on my worst enemy.
Thankfully, God answered our prayers, and my back got miraculously better out of nowhere. (well, actually after a LOT of prayer, seeking, and obedience to what I felt He was laying on my heart…)
Anyway, it’s been hard getting back on track. I went from going to the gym 6 days a week for months, and seeing Aaron my personal trainer, to laying in bed for 3+ months, Needless to say, since I have gotten better, my energy level has been extremely low from laying around for months on end. plus I’m back to school now, so…ZZZzzzzzzzzzzzzzzzz
Oh well…no more excuses! It’s getting nice out again, I’ve been released from PT and OK’d to start exercising again, and I need to wake up and get back to it! Not only with my eating, but I need to get my butt back to the gym!
Heck, it’s probably been around 3 weeks since I’ve exercised at this point!
So…yesterday I watched what I was eating, and did well all day, and I vowed to pick up some healthy supplies at the store after work!
I got a bunch of Tupperware containers because I wanted to do the thing where you actually prep healthy meals in advance (there’s a concept for ya…) So last night I wound up cooking up these bad boys…
Yes, yes……….I know, believe me, I DO!
Guy Fieri is a TOTAL DOUCHE!
I must say though, these things are really good, and are only 110 calories each, so I don’t care if Satan himself was behind this product line (and he very well may have been considering the source) I’ll proudly buy them from now on.
Oh…who am I kidding, you know I’ll place other things on top of these “sausages of shame" in my cart at the grocery store so no one sees me buying them, and then place them upside down on the conveyor belt as well.
For my sides, I chopped up and roasted some sweet potatoes with a little spritz of Olive oil and some salt, and steamed some sugar peas.

Yup, that was my lunch today, and yes, I’m aware it looks like it was prepared by Lorena Bobbitt. It was good though, and it didn’t leave me hungry, so that’s a big WIN in my book!
I also purchased one of these bad boys yesterday!
This air popper is awesome and I’m left wondering how I’ve lived almost 38 years without one!!!
I am seriously in love with this thing! I swear it not only pops corn, but it also shoots out rainbows and unicorns and pure awesomeness!
The thing is, when I’m trying to eat healthy, I really try to limit my carbs to “good carbs”, you know, the kind with a low glycemic index like steel cut oats and crap like that. Carbs really aren’t my friend.
Yeah, I know, carbs are hardly anyone’s friend, and if carbs ARE your friend; if you’re one of “those girls” who can eat pizza, chips, and cupcakes until they’re coming out your ears and still be a size zero, well…seriously, you can just get bent…honestly

But with me, it’s more than just weight gain, it’s also due to the fact that I’m hypoglycemic. When I eat bad carbs, my glucose level rises and then shortly thereafter plummets drastically. That happens with everyone, but when I say mine plummets, I’m talking blood glucose of like 69, which then brings on the jitters, and the sweats, along with a throbbing headache, lightheadedness and well…general malaise.
All of this carb limiting leaves an empty hole in my soul that can only be filled by yummy crunchy salty goodness! I fill the void eating almonds, but sometimes, I just want something else (plus, I can only eat so many almonds due to the calories involved.)
Oh potato chips, how I miss thee…
I know that popcorn is a carb, and probably not even a good one, however, it’s so low in calories when you air-pop it, and eat it in a portion controlled way that I don’t have a problem. I popped 2 batches last night, seasoned them, and then portioned them out in baggies right away.
That air-popper is the best 20 bucks I’ve spent in awhile!
here’s to me getting back on track! I just need to make sure I:
A.) Plan ahead (meal prep, meal prep, meal prep!!!)
B.) Get enough sleep
(because if not I STARVE the next day!)
C.) Get my butt to the gym!
D.) Get though this upcoming weekend and my upcoming time of the month (aka, shark week)
Those 2 things are usually what derail me every darn time.
If I do all of this, I should be good to go!
OK, I have a bit of an addiction, but for once, it’s to something relatively healthy (hooray!) Dole’s Banana Dippers with Almonds have become a daily indulgence. I’ve gotten off the wagon with my weight again (which I’m trying to remedy once more…) and thank the good Lord for these lovely chocolate medallions of pure heavenly goodness!
Each individual pack contains 4 slices and is only 120 calories, or only 100 calories for the plain chocolate version. (personally, I love the added almonds!) They also make chocolate covered strawberry dippers, but I wasn’t as much of a fan of those, and for some reason, they made my tongue hurt???
Each box runs around $3.59 ish, and I think the price is pretty darn reasonable, since if you figure, it comes to about 60 cents per package. NOT BAD AT ALL!
Seriously, for someone with a sweet tooth like myself, these suckers are a little slice of heaven, and a glorious chocolate fix from the Gods!

Finished The Maze Runner tonight. It was not a “great”, but solid “good.” I went to start the 2nd book, “The Scorch Trials”, but ended up putting it down, for now anyway. I need something different, so i picked up this for a bit of a change.
Oh, this is just brilliant! Muah ha ha!
